Sweet and Sour Lapu-Lapu


1 medium size lapu-lapu, fried
100 gms ginger
1white onion
2 gloves garlic
1 red & green bellpepper
1 carrot
1 small can of pineapple chunks
1 small can of black beans
1 tsp cornstarch
1 tsp.fish sauce
pinch of salt & pepper\


1) Season salt & pepper Lapu-lapu ,deep fry & set aside
2) In a pan saute ginger, onion, garlic until brown
3) Add bell pepper, carrots and black beans with fish sauce
4) Pour in slurry (combination of water & cornstarch)
5) Add the pineapple chunks and off heat
6) Top the sauce into fried lapu-lapu and garnish with chopped spring onions.
