Beef Broccoli Stir Fry
Ingredients
For the sauce:
1 tablespoons lemon juice or calamansi juice
1/2 tablespoon fresh ginger, grated
1 tablespoon soy sauce
1 tablespoon toasted sesame oil
1 teaspoon sugar
Stir Fry:
½ kilo beef steak cut into thin cube
3 tablespoon olive oil
3 cups broccoli florets
4 cloves garlic, minced
3 cups sliced mushrooms
Preparation:
Prepare the sauce: In a bowl, mix lemon juice, ginger, soy sauce, sesame oil, and sugar. Set aside.
For beef broccoli stir-fry: Heat the pan. Add olive oil to coat the pan. Stir fry the steak for 10 minutes. Set aside.
Add another tablespoon of olive oil, add garlic and mushroom. Add broccoli. Stir-fry for 5 minutes or until the vegetable become tender.
Place the beef broccoli stir fry in a large plate. Pour the sauce and garnish with fresh basil leaves.
Baked Beans
Ingredients
1/3 cup barbecue sauce
1/2 cup water
1 tablespoons tomato paste
1 tablespoon olive oil
1 onion, chopped
¼ kilo chicken breast
2 large cans local beans
Salt and pepper to taste
Preparation
Prepare the chicken meat by boiling for 15 minutes or until cooked. Set aside and let it cool for another 10 minutes. Using your hands shred the chicken into medium sized flakes.
Then, in a bowl, whisk barbecue sauce, water, tomato paste, olive oil, salt and pepper.
In a large pan, heat olive oil over medium heat. Add onion and chicken, sauté for 3 to 5 minutes. Add beans and continue stirring for 3 minutes.
Reduce heat to medium-low; add beans and the sauce mixture to the pan. Gently stir to combine, cover and cook until heated through, about 3 minutes.
Oil the baking pan. Pour the mixture evenly. Bake for 10 minutes.
