Learnings from Dine Philippines 2014 in Pampanga

New speakers and new learnings were imparted when Dine Philippines Food Business Seminar Series, the only travelling learning session on food entrepreneurship, held its fifth leg for its 2014 roadshow in Angeles, Pampanga on November 14, 2014.

Held in partnership with Holy Angel University’s College of Hospitality and Tourism Management, close to 300 delegates trooped to the newly build PGN Auditorium to listen and learn from some of the country’s masters in the hospitality and food service industries.

The best and the brightest in the dining and hospitality industries were represented during the one-day-only event.

The seminar proper commenced with Vic Alcuaz, President of Narra Hospitality, Inc., and a veteran hospitality trainer, head hunter and consultant. By sharing real life stories of Filipino hoteliers, who are also highlighted in his book entitled Hospitality Superstars, Mr. Alcuaz stressed that focus; determination and hard work are the best practices in the industry.

Alvin Reyes Lim, President of Serye Café Filipino, imparted his knowledge on entrepreneurship and business planning. He articulated that entrepreneurship is both an art and science, and even luck plays its role; but long term business preparation is importance in sustaining the success of a food business.

As for Chef Sau Del Rosario, an alumnus of Holy Angel University, a personal advocacy was also the topic of his discussion. He conveyed that putting health and wellness in menu development, knowing how ingredients are grown and sourced is the responsibility of all food business stakeholders. Chef Del Rosario operates, among other food businesses, Food Garage, which supplies breads and other ingredients to institutional accounts.

Chef Peter Ayson of the Red Crab Group, candidly revealed his experiential realizations on banquet and catering operations; while at the same time informed participants of the fundamental business areas that should be considered in such a service.

To conclude the seminar, industry consultant and trainer and President of Courage Asia, Adolfo Aran, Jr., predicted the Top 15 food and beverage trends that will be evident in the coming year, 2015.
