The much talked about Purple Yam in Brooklyn, New York finally comes to Manila!
Purple Yam Brooklyn is the baby of Chef Romy Dorotan and Pinoy food chronicler, Ms. Amy Besa (former owners of Cendrillon). As both are based in NY, they brought a bit of the Philippines with them and served the best of the country’s dishes to their diners. After some time, and a lot of begging and prodding from friends, the dynamic couple agreed to open Purple Yam in Malate. And this time, they decided to search out local farmers and serve dishes cooked either as traditionally as our grandmothers would cook them or paired with another cooking technique that will bring out the true flavor of the ingredients.
The menu is at best indigenously eclectic: Popcorn Dilis, Kinagang (Sorsogon tamales with shrimps & crabmeat on a bed of buko & lukadon, lemongrass, herba buena in banana leaf), Binacol (cooked French style), Barbecued Baby Back Ribs (beef from Dugan Farm in Batangas), Organic heirloom rice (Kalinga unoy & black rice from Bukidnon), Organic Tapuy (rice wine – from Apayaw with kamias fruit pop), Passionfruit sorbet, even their coffee is from Miarayon, Bukidnon and grown by the Talaandigs.
Complementing the home-grown dishes is the ambiance of Purple Yam Malate (PYM). It is housed at the beautifully preserved Besa’s ancestral house. The ambiance is laced with old world charms mixed with a lot of familial history. The same sofa used by Amy’s family was restored and remains at its normal place in the sala or receiving area. Family photos, original master paintings and knick-knacks collected from all over the world adorn the walls and shelves.
Dining at PYM is both a visual and gastronomic delight. Chef Romy and Amy’s passion for celebrating, promoting & using regional and local ingredients comes alive with every dish they serve. Good food, high quality ingredients and amazing food stories makes PYM a foodie destination.
