RECIPE #1: ZUCCHINI LASAGNA


Ingredients: 

4 lasagna sheets
1 cup cheddar cheese, shredded
½ cup parmesan cheese grated
1 zucchini, sliced
¾ cup marinara sauce

Procedure:

Preheat oven to 350 degrees F.
Layer lasagna sheet, zucchini, and cheddar cheese.
Drizzle with marinara sauce. Sprinkle with parmesan cheese.
Bake for 20 minutes
Prep time: 5-10 minutes
Cook time: 20 minutes
Servings: 4

RECIPE # 2: SALMON AND SPINACH LASAGNA

Ingredients:

8-10 dry lasagna sheet
1 leek, cut into thin slices
1 cup baby spinach leaves
1 cup chopped kale leaves
1 garlic clove, crushed
400 g salmon fillet, cut into cubes
1 lemon zest
½ cup parmesan cheese grated
4 tbsp of chopped parsley
Nutmeg to taste
Olive oil
For ricotta white sauce:
½ cup fresh ricotta
½ cup milk
1 pinches ground nutmeg
Salt and pepper

Preparation:

Heat oven to 360 degrees F.
Prepare a large pot with boiling water and blanch the lasagna sheet one by one for 1 minute each. Pat dry with a towel. Set aside.
Prepare the filling:
On a pan, pour olive oil, sauté garlic and leeks. Pour a little water and add the spinach and kale. Simmer for 1 minute. Add the salmon and allow simmering for another 2 minutes.
Season with salt and pepper, lemon zest and a pinch of nutmeg. Set aside.

Prepare the white sauce:

Blend ricotta and the milk until it has a creamy consistency. Season with salt and pepper and a pinch of nutmeg. Set aside.

Layering:

Drizzle the bottom of an oven dish with olive oil and white sauce. Add a layer of lasagna sheet. Layer with the filling and pour the white sauce. Repeat layering until the dish is full. Finish with white sauce and grated parmesan cheese.
Bake for 20-30 minutes.

RECIPE # 3: BLACK BEANS LASAGNA

Cook time: 20 minutes
Servings: 6

Ingredients:

9 small corn tortillas
1 large onion, chopped
2 cloves garlic, chopped
2 tbsp olive oil
1 red bell pepper
1 can of black beans
1 cup corn kernels
2 tbsp fresh lime juice
Lime wedge for serving
½ cup cilantro leaves
1 can red enchilada sauce
1 cup Muenster cheese
Sour cream for serving

Procedure:

Heat oven to 425 degrees F.
In a pan, heat the oil, sauté garlic and onion, add bell pepper for 5 minutes. Add beans, corn and cook for another2 minutes. Pour lime juice and add cilantro leaves. Set aside.
Get an 8-inch square baking dish. Spread the bottom with ½ cup enchilada sauce. Top with 3 tortillas. Top with the bean mixture. Repeat until all the ingredients have been used up. Top with cheese.
Bake for 12- 15 minutes. Serve with lime wedges, sour cream, and hot sauce.

RECIPE # 4: POTATO LASAGNA

Ingredients:

2 links of sausage (any variant)
1 ½ onions, chopped
1 cup ricotta cheese
1 tsp. dried basil
1 egg white
2 cups marinara sauce divided
3 pieces, medium-sized potatoes, sliced
1 cup shredded cheddar cheese.

Preparation:

Slice sausage and sauté with onion, cook for 10 minutes over low fire.
In a small bowl, mix ricotta, basil, and egg white.
Get a 9-inch square baking dish. Spread ½ cup marinara sauce at the bottom. Place 1/3 of potatoes in the bottom, top with ½ ricotta mixture. Sprinkle with cheese and top with sausage mixture. Repeat layering.
Cover with plastic wrap. Make a small slit to vent. Microwave on high for 30 minutes.
